Napa in October smells like fermenting Cabernet and warm dust off Highway 29. The crush is on, the cellar doors are open, and the valley is running at full tilt.

I have led groups through here for years, and the same thing happens every time. People arrive thinking Napa is one big tasting room, and they leave realizing it is thirty miles of very different dirt making very different wine.

A private tour is how you see that. Here is how to do it well.

Why Go Private in Napa

The honest reason is access. Most of the wineries worth your day are by appointment now, and the cult names like Screaming Eagle and Harlan do not open to the public at all.

A good private guide books the rooms you cannot book yourself. That means a sit down with the cellar, a barrel sample straight from the tank, sometimes the winemaker’s own time.

The second reason is the driver. Napa County takes drunk driving seriously and patrols Highway 29 and the Silverado Trail hard.

Someone has to stay sober if you drive yourself, and that person will be miserable while everyone else tastes Cabernet. Hand the keys to a guide and the problem disappears.

The third reason is pace. Left to themselves, people try to cram in six wineries and taste nothing properly.

Winter is underrated. January and February run cool and sometimes wet, tasting fees soften, and you can get appointments at estates that turn you away in October.

What You Will Drink

The Cabernet

Napa is Cabernet Sauvignon country, full stop. The valley floor in Oakville and Rutherford grows some of the most expensive Cabernet fruit on earth, and the To Kalon vineyard in Oakville is the name serious drinkers chase.

This is the wine that beat Bordeaux. At the 1976 Judgment of Paris, a Stag’s Leap Wine Cellars Cabernet topped a blind tasting against French first growths, and Napa stopped being a footnote.

Expect big, ripe, structured reds built to age. A young Cabernet from a hillside site like Howell Mountain or Mount Veeder can be tannic and closed for years, so ask what is drinking now versus what you should lay down.

Beyond Cabernet

Do not let anyone tell you Napa is only Cabernet. Down in Carneros, where the fog rolls in off San Pablo Bay, the climate cools enough for serious Pinot Noir and Chardonnay.

Carneros is also where you find real sparkling wine. Domaine Carneros makes it in the méthode traditionnelle, the same way Champagne does, and Schramsberg up in Calistoga ages its bottles in hillside caves.

There is old Zinfandel here too, some of it from vines planted before Prohibition. And the Sauvignon Blanc, especially from a grower like Frog’s Leap in Rutherford, gives you something bright to drink before the Cabernet flattens your palate.

Where a Good Tour Takes You

The valley splits into two roads running north to south. Highway 29 is the busy spine through Yountville, Oakville, Rutherford, and St. Helena.

The Silverado Trail runs parallel on the quieter east side, and a smart guide uses it to dodge the worst of the traffic. A strong day usually pulls from a few of these areas.

• Oakville and Rutherford. The heart of valley floor Cabernet. Inglenook in Rutherford is a working château with real history, and the soil here even earned its own name among old timers, Rutherford dust.

You will also want to eat, and Napa feeds you about as well as it pours.

Yountville is the food town. Thomas Keller’s The French Laundry holds three Michelin stars and opens reservations roughly two months out through Tock, and his Ad Hoc nearby does a famous fried chicken on Mondays.

For something simpler, Gott’s Roadside in St. Helena turns out a proper burger that a tasting crowd loves. Bistro Jeanty in Yountville has been serving its tomato soup in puff pastry to locals for two decades.
